Observed opened pre-cooked RTE hot dogs with no datemarking in standing reach-in unit located opposite of service line. PIC stated hot dogs were opened 03/13. Discussed datemarking requirements and procedures. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). 3RD CONSECUTIVE VIOLATION. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-3-501.18 - Priority: Ready-To-Eat Time/Temperature Control for Safety Food, Disposition. Person in charge states everything but the cooked mushrooms have been in the unit for less than 4 hours and moved them to a working cooler to cool down. Cooked mushrooms were voluntarily disposed of at the time of inspection. Discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth.
