SECOND CONSECUTIVE. Observed Sliced turkey meat(45°F), Sliced beef (47°F), Sliced Vito meat (45°F), Pesto pasta (44°F), Peppers (45°F), Mayo (45°F), and Opened containers of Mayo, Ranch dressing, and Caesar dressings. All other TCS foods which had been in the unit overnight were embargoed (see embargo list). The prep table measured at 44.4°F with the min/max thermometer. Manager will place TCS items in the nearby standing refrigerator until the prep line cooling unit can maintain temperatures below 41°F. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the prep table cooler front of house having an ambient temperature of 45°F storing only prepped meat made an hour ago. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Inspector instructed PIC to discontinue the use of the table cooler for cold holding TCS items until unit is able to maintain 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the main handwashing sink nearest the three-compartment sink and prep tables, with a sizable leak from the pipe underneath the basin. A sign has been placed near the sink, "Please do not use." Staff stated they were using the other handwashing sink in the back of the establishment near the walk-in. ALL handwashing sinks MUST be kept in good working order at all times. Proper and prompt repair is REQUIRED. Handwashing sinks to be ALWAYS maintained unobstructed and accessible. A reinspection on the handwashing sink will be conducted in 10 days. Corrective Action: Correct prior to reinspection.

Observed various sliced deli meats (48-51°F), sliced tomato (50°F), sliced cheeses (49-52°F), chopped lettuce (50°F) and Time Temperature Control for Safety (TCS) spreads (49°F) in the prep table cold holding above 41°F. Upon further investigation, it was discovered that the prep table had turned off. The manager did a line check two hours prior to the temperature measurement and documented that TCS foods were in temperature (below 41°F) during the line check. Staff turned the prep table back on and moved all foods to the other nearby working prep table, at time of inspection. Discussed the importance of maintaining cold holding foods at temperature.
