Inspector's notes

SECOND consecutive. Observed milk (54°F), cold brew (53°F), dairy-based shakes (55°F), tea (55°F), and lemonade (54°F) cold holding above 41°F in the medium-sized low refrigerator across from the cash register. The refrigerator measured 54.5°F on the min/max thermometer. All thermometers were calibrated with staff at time of inspection. Alerted the manager who discarded any Time Temperature Control for Safety (TCS) that had been in the unit overnight (see embargo). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. A work order was placed on the refrigerator at time of inspection. Discussed cold holding requirements with staff. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed various TCS and non-TCS foods cold holding above 41°F in the medium-sized low refrigerator across from the cash register. The refrigerator measured 54.5°F on the min/max thermometer. All thermometers were calibrated with staff at time of inspection. Alerted the manager who discarded any Time Temperature Control for Safety (TCS) that had been in the unit overnight (see embargo). Observed regular milk (50°F) and chocolate milk (50°F) in the tall grab-and-go cooler above 41°F. The manager stated the milk had been in the tall grab-and-go cooler overnight (see embargo). The tall grab-and-go cooler measured at 44.6°F on the min/max thermometer. The manager plans to call their third-party servicer to repair the tall grab-and-go. Milk will be placed in the other grab-and-go cooler until the tall grab-and-go can maintain at or below 41°F. Discussed the importance of maintaining all Time Temperature Control for Safety (TCS) foods at or below 41°F. Corrective Action: Corrected at time of inspection.
