Observed dehydrator in the back room of the establishment. Per person in charge, it was going to be used for making beef Jerky. Informed person in charge beef jerky cannot be made onsite without a variance. Remove dehydrator. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed multiple strings of tubed longaniza raw pork sausage hanging from a metal rack in the rear kitchen. Sausage had an internal temperature of 71 degrees Fahreneheit. Per person in charge the sausage was made and left out sometime in the morning, around 9am. Sausage should be dried, or hung only under refrigerated conditions. Person in charge discarded sausage at time of inspection. Corrective Action: Correct prior to next routine inspection.

Observed raw fresh beef cuts at the butcher counter that is vacuum sealed onsite. Per person in charge the items were vacuum sealed yesterday and the current inspection morning. Items are being sold over the counter in a fully sealed reduced oxygen state to the customer with cutting the seal allowing adequate oxygen into the packaging. Discussed variance application and ROP procedures with person in charge. Person in charge opened all packages of vacuum sealed meat at time of inspection. Per person in charge the items will be sealed and date marked with a 48 date mark. At the end of this 48 hours the product will be opened. All items will be opened at time of purchase so that no items will be sold in a reduced oxygen packaging. Correct By: Corrected At Time Of Inspection
