MCEHC Chap. 8, Sec. 2, Reg. 5a - Latex gloves may not be used in direct contact with food. Predefined Comment: Latex gloves are not approved for food handling. The person in charge changed out the gloves at the bread station with vinyl gloves. Instructed person in charge to discontinue utilizing latex gloves for handling food. No detectable chlorine (0 PPM) was observed after refilling the sanitizer jug, priming the machine, and running the dish machine for a second time. Acceptable chlorine concentration shall be between 50-100 PPM. Establishment will utilize three-compartment sink until the kitchen dish machine is repaired. OC Re-inspection. Walked with Fabio. Catering.Correct the following items prior to your routine inspection:1) Make doors to kitchen tight-fitting. Do not open garage doors until kitchen is closed off.2) Draft beer system not yet installed. Ensure drain lines are hard piped, sloped to drain, with 1” air gaps at floor sink.3) Re-plumb ice machine so that drain lines are hard-piped, sloped to drain, with 1” air gaps at floor sink.4) Replace clean out cover where missing.Establishment will be set up as an outdoor bar and sealed off kitchen. The pasta prep area will only be used in times when the doors or not open, or the pasta made will be for display only.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so.
