PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed sanitizer levels in the 3-compartment sink that were testing below 150-400 ppm as indicated by the testing strips. Sanitizer was available however it was not properly dispensing from the machine. PIC made service call to have the sanitizer dispenser at the 3-compartment sink serviced. PIC set up sanitizer solution manually and tested the solution using test strips to verify concentration was between 150-400 ppm. Please ensure that employees are routinely utilizing test strips to check sanitizer concentration levels. Correct By: Corrected At Time Of Inspection
