Inspector's notes

Observed nacho cheese measured 67'F in dispenser machine. Observed assembled hot dogs with cooked sausages (106-112'F) in standing warmer unit located close to 3-comp sink. PIC stated all food items in question were prepared less than 2 hours prior. Food employee stated both units were turned on late. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
