Observed cut tomatoes in the open top prep table next to the register to be 51'F via probe thermometer. Per PIC the tomatoes were cut about 1.5 hours prior to inspection. Discussed proper cold-holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Instructed PIC to raise the temperature dial for the warming unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Observed both hot & cold water handles of the mop sink to be in the "off" position, and the flow of water continuing, unimpeded. Establishment had installed shutoff valve downstream from the atmospheric vacuum breaker to serve as a means to stop water flow from the mop sink while not in use. PIC removed shut-off valve from atmospheric vacuum breaker at time of inspection. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. Discussed plumbing requirements with PIC.
