Discussed with person in charge (PIC) that only a certified pest control specialist can apply pest control spray. PIC removed the spray from the premises at time of inspection. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.Discussed employee sick policy with person in charge (PIC). PIC stated they will make a policy to go over with their employees. PDF guidance documents were emailed with report to help with training.

observed at the three compartment basin, food worker staff washing the food cutting boards and utensils with water at the middle basin, and rinsing with water, placing the utensils, inside the final sanitizer basin. washed knives and utensils were carried and placed on storage racks. proper manual 3 compartment basin stages reviewed. please ensure staff conducting manual warewashing are filling the 3 basins as was, rinse, and sanitize, and then use the drying bords for airdrying for the final stage. manager will train staff on manual warewashing procedure. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
