Inspector's notes

Observed cooked chicken, turkey breast, egg whites, and cooked hashbrowns in a cold holding unit with an internal temperature between 48 and 56 degrees F. Person in charge (PIC) stated that the cold holding unit was filled 1.5 hours ago and that the food came directly from the walk-in cooler. Cold-holding unit was tested using a minimum temperature hold thermometer to ensure proper function. Cold holding unit was holding at 38 degrees F. Improperly cold-held foods were relocated to the walk-in cooler immediately by the PIC and replaced with food in proper temperature. PIC was advised to keep cold holding unit closed as much as possible and to avoid overfilling cold holding containers to prevent warming by ambient temperatures. Corrective Action: Corrected at time of inspection.

Dog Friendly PatioIn addition to the U.S. Food and Drug Administration 2017 Food Code Rule 6.501.115, no dog shall be allowed on a food establishment premises unless theDepartment has issued a Dog Friendly Patio Permit to the food establishment. A Dog Friendly Patio Permit shall not be issued unless the food establishment complies with thefollowing conditions and standards: a. A separate entrance shall be provided from the exterior of the food establishment to the outdoor patio so that a dog will have direct access to the patio without entering the interior of the food establishment or any playground area of the food establishment. Establishment uses QT-40 as a sanitizer at the three compartment sink. Food contact surfaces must be kept in contact with the Quat sanitizer for at least 30 seconds or for the time outlined in the manufacturer recommendations on the product label. Employee was instructed to place all food contact surfaces on the clean side of the drain board back in the sanitizer to achieve proper contact time. Internal temperature of cooked hashbrowns measured 77°F with inspector probe thermometer. Per PIC, the hashbrowns were recently cooked (less than one hour ago). Per PIC, the establishment uses time as a control and discards cooked hashbrowns before the four hour time frame. Per PIC, hashbrowns are typically sold well before the four hour discard. Establishment must have a written time as a control policy for products under time as a control (TAC) and label the product to show time elapsed at room temperature.
