Observed a strainer that was stored as clean according to the person in charge on the clean dishes rack. Upon closer observation, the strainer had bits of food still stuck to it. Person in charge returned the strainer to the dish washing area to be washed, rinsed and sanitized. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Observed several plastic bins that were stacked together with water still trapped inside of them at the clean dishes rack. Person in charge separated the plastic containers that were stacked together so that they could fully air-dry prior to stacking them together. Discussed with person in charge that all equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.

Reseal hood vent juncture as discussed.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Equipment inspection conducted with Site Superintendent. At the time of this inspection, this project was about 80% complete.Inspection report emailed to Darin R.Please address the following prior to next inspection:1. Ensure all hot water is available to all sink fixtures within 45-seconds.2. Ensure hot water is provided to hand sinks between 100°F-110°F.3. Certify the backflow preventer and provide copy of the backflow preventer test certification.4. Ensure that all non-carbonated beverage systems connected to water supply have an individual ASSE 1022 upstream of the devices (coffee, beverage dispenser).5. Ensure all chemical dispensers have a physical air gap (1055A).6. Provide a rigid drain line connected with a minimum 1-inch air gap to the floor sink for dipper well.7. Provide uni-strut for the drain lines and secure all uni-struts to the floor to maintain air gaps with floor sinks (ice machine, dish machine).8. Fill all gaps cracks and penetrations (juncture at front counter, corner of cook line and side wall).9. Provide escutcheon plates and cleanout covers where needed.10. Adjust air curtain at rear entrance so that it blows outward to exterior.11. Seal both hoof vent systems using heat resistant silicone.12. Seal backsplash and sides of all sink fixtures.13. Reroute the drains for the 3-compartment sink to floor sink.14.
