#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

At time of inspection the self-locking mechanism on the door was engaged with the door left open 1-2 inches. Building facilities manager stated that the vendor was onsite about three hours prior to inspection restocking the machine. The milk inside the unit had an internal temperature of 58*F. The ambient temperature of the unit was 44.2*F, measured using min/max. Informed PIC and facilities manager that due to the unit not being able to seal properly when unlocked and milk being out of temperature, the unit needs to stay locked and all TCS foods (milks and cream cheese) currently in the unit must be discarded by the vendor at the next visit. Facilities manager was able to completely lock the unit at time of inspection and agreed that the unit will remain locked until the lock mechanism is functioning properly and able to hold TCS foods at 41*F or below. PIC stated that they will have the vendor take all the improperly cold held food items at their next visit and have them fix the lock. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
