When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Person in charge contacted repair person and had three compartment sink set up for use at time of inspection. Corrective Action: Corrected at time of inspection.

Observed refrigerated unit on line with top portion of cooler holding Time/temperature Control for Safety (TCS) foods (cut tomatoes, cole slaw, tartar sauce, mayo, sour cream) with internal temperatures measured to be 46-51*F. Per Person in Charge (PIC) these items were just put in unit within the hour. PIC will have items put in ice bath, discussed using four hour time as a public health control policy for items in this portion of cooler as it is near a warm area of line. Observed other items in bottom of cooler holding at proper cold holding temperature. PIC will continue monitoring temperature. This is a second consecutive violation.

Dish machine in back of house is a high heat sanitizer machine. The temperature was ranging between 117-130 after multiple attempts. Discussed checking the temperature routinely to ensure it is reaching 160 degrees F or hotter. Dish machine in bar area is a chlorine sanitizer machine and was not dispensing chlorine. Discussed utilizing test strips daily to ensure chlorine sanitizer is measuring between 50-100ppm. A three-compartment sink will be used to sanitize all dishes. Neither machine will be utilized for sanitizing until in good repair.

Large containers or chili and potato soup were made 2 days prior to inspection and stored in the walk-in with lids securely on the containers. The chili measured with an internal temperature of 49 degrees towards the top of a full container. The potato soup measured with an internal temperature of 46 degrees F. Both items were recommended for discard- see embargo list. Discussed proper cooling time frames- cooling process begins at 135 degrees F- has 2 hours to reach 70 degrees F- then an additional 4 hours to reach 41 degrees F. Recommended using cooling logs which are available.

Observed (expo) prep refrigerator measuring an ambient temperature of 51 degrees on top portion only. TCS food items such as sauces, slaw, and sorn salsa measured with internal temperatures ranging between 47-53 degrees F. There was not a temperature log available to indicate last temperature taken- all TCS food items were recommended for discard. See embargo list for details. Discussed conducting routine temperature checks and tracking on log sheets that are already available. Ice baths will be used temporarily for the current lunch shift. Prep refrigerator is scheduled for repair today. The prep refrigerator is not required to operate safely. Alternative refrigeration available

Observed various soups made today within the last hour. The soups were still measuring at approximately 80 degrees F towards the top of a deep container. The lids were securely on the containers- not allowing for proper cooling. The lids were removed. Discussed alternative cooling methods for deep containers such as ice baths or cooling wands. Also observed cooked carrots cooling at room temperature. The carrots measured with an internal temperature of 70 degrees F. Discussed cooling parameters- active cooling begins at 135 degrees F and the carrots should have been placed in refrigeration at that time. PIC placed them in the walk0in refrigerator at time of inspection for proper cooling.

Final walk through inspection. Construction complete and approved. Superintendent will follow up on the items below:1). Door sweep under the back door will be adjusted.2). Mop sink faucet will be tightened up as it is loose in the wall.3) Fly fans are operational but very strong at the bar's sectional door. They will adjusted and the air flow will be reduced so we create a insect barrier but without the nuisance.4). LED light at the dish washer will be replaced, the steam of the dishwasher damaged the light.5). Hand was sink drain at the ice machine is loose and will be re-mounted.6). The drain on the hood is being replaced, the new drain will ender the floor sink closer to the wall and please install a 3/4 drain grate so the make table caster does not get stuck in the sink.7). Please finish out the floor around the chase line under the waiter-tres station soda fountain.E-mail is set for electronic billing.This establishment/operation has been evaluated and qualifies for the issuance of the permit. To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Pre-final walk through. Construction near completion. The following items were discussed for follow up before the final inspection:1). In the restrooms the counters will be caulked at the wall junctures.2). Door sweep will be installed under the side door.3). Mop sink will be caulked in at the floor and wall junctures.4). Fly fans will be made operational at the bar sectional door.5). In the kitchen and bar, where there are gaps between the FRP trims and the base tile, seal.6). The pressure regulator on the dish washer is leaking. Please repair.7). The three compartment sink drain is leaking in two spots. Please repair.8). Provide missing cam hole plug.9). Please finish out the foamed chases, in beer cooler and under equipment.10). All sinks will be siliconed at the top wall juncture.11). Mount escutcheon under the dish washer.12). Brace drains under the dish washer.13). Install an RP valve upstream of the glass washer at the bar.14). Hub drain will be reduced and outfitted with a trap seal.15). Drain under the dish washer at the bar will require an air gap. All drains at the bar will require an elbow down.16). Brace all drains lines at the bar. 17). Fill gap to the side of the floor sink at the bar.18). Stainless trim and caps will be finished up at the charcoal cooks line.19). Second walk through of the project with management and superintendent. The following items were discussed for follow up:1). Hand wash sink counters in restrooms will be sealed to the wall.2). After cleaning stop wall tiles schluter will be sealed to the wall.3). There is a light strip along the back wall, there is probably enough light in the stalls.4). A separate water line will be provided in the mop sink cove for future chemical dispensers.5). Provide escutcheon plates for all water and waste water lines, under dish gutter, drain of soda backflow, for the new water line wall penetration at mop sink, etc.6). Clean out covers will be installed where missing.7). Make sure to seal the tile floor. vinyl floor in walk-in transition. 8). The following tile work is pending:a). Tile work in corner at entrance walk-in will be finished up.b). Grout will be touched up where recessed missing, Floor sink under bar dish washer, around soda and beer chase lines in waitress station and bar. Multiple locations.c). At cook line tile work will be brought up to the wall with cove base tile around the wood fired grill.9). Mop sink will be flashed and caulked in at the floor and side junctures, were stainless stands open, silicone gaps.10). Provide at least one and maybe more additional lights in the walk-in, 10 foot candles is required throughout at 3 feet off the floor,11). Hood for wood fired grill will be flashed to the wall with some stainless.12). All other hoods will need to be caulked at the back wall junctures and in between.13). The following plumbing changes will be required:a). All drain lines will require a 1 inch air gap.b). Floors are required to be easily cleanable per National FDA Food Code- Meaning in food service drain lines need to be installed so that the floor is accessible for cleaning as much as possible at the bar and anywhere else. So:i). Ice machine bin drain line need to be elbowed back to the wall, as high as possible, then over to the floor sink, properly braced, run forward to the floor sink at least 6 inches off the floor and then elbow down and 1 inch air gap, follow gravity flow.ii). At final all sinks will be filled half way and then released. If there is over splash for the floor sink the drain line needs to be re-plumbed.iii). All drain lines will need an elbow down. Including hub drains, water heater drain pan, condensate etc.iv). Drains under the dish washer will require an air gap, No matter what , remove the uni-strut and lead drain lines along the walls.14). Air curtains will be required over the sectional bar door. Fly fans will need to be micro switch activated as soon as the door opens.15). Soda drop in well will need to be siliconed at the joints, not sure if the stainless can be bend back so the gap is smaller.16). Corners throughout the kitchen and waitress station will receive corner guards covering all gaps.17). Fly fan at the back door will be moved to the outside.18). Door frame will be caulked in at the back door.19). Back door will be insect tight, with door sweep and weather stripping if needed.20). At final please provide all backflow tests.21). A backflow valve is required for the mister system when installed.22). All sectional bar equipment will need to be sealed in between after mounting.23). Ceiling tiles in the restrooms are required to be washable, provide a washable ceiling in the restrooms.24). Finish up walk-in condensate drain lines.25). Finish wall around the condensate hub drains.26). If a hub drain is used then install a trap seal in the pipe.Construction is at 80% completion. First walk through with the superintendent. Plumbing is complete and walls are closed up. Finishes are about complete.The following items were discussed:1). Hub drains for walk-in condensate will need trap seals.2). Cooks line hand wash sink drain and water lines will be closed off by cabinet, no need to finish out.3). Walk-in will receive a sloped roof and TPO on top. Sides will be flashed off o the out and in side.4). Walk-in floor will be vinyl, coved floor / wall juncture is required, ideally metal coved base. If vinyl is rolled up the wall install coved trim at the floor wall juncture tp reduce stress on the material.5). A separate water line will be required at the mop sink. It can come through the platform.6). Reduced Pressure Zone backflow valve will be installed at the bag in the box near the mop sink. Hub drain can be led to the mop sink.7).
