Observed wiping cloth bucket at prep station near 3-compartment sink with plain water and no sanitizing solution. Person-in-charge (PIC) dumped wiping cloth bucket and refilled with quaternary ammonium sanitizer solution measuring at 300 ppm. Discussed maintaining sanitizer measuring at 150-400 ppm for quat solutions or 50-100 ppm for chlorine solutions in wiping cloth buckets at all times, when wet cloths are present. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
