Observed pink organic build up on the bottom of the plastic ice shield inside the ice machine. Spoke with PIC and they will clean the ice shield tonight. Ensure ice machine is cleaned at a frequency to prevent the build up of organic matter. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Nacho cheese with an internal temperature of 99 degrees F was hot holding in the cheese dispenser near the hot dog rollers. Spoke with PIC and they stated that the cheese was placed into the dispenser yesterday and that the bottom black plastic piece is broken. Both bags of nacho cheese were discarded at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
