Observed prepping of corn on the cob to be cooked without a probing thermometer onsite. Discussed with Person in Charge (PIC) properly calibrated probe thermometers are required at all times for monitoring food temperatures. Must provide a probe thermometer for establishment prior to re-inspection. Corrective Action: Correct prior to re-inspection. Reinspection scheduled on 1/23/25

Observed clean sheet trays stored on their side directly on the ground within the metal storage cage. Discussed with Person in Charge (PIC) all equipment shall be store 6 inches off of the ground. PIC washed the sheet trays at the time of inspection before use. PIC placed boxes in the storage cage to place the sheet trays on as a temporary fix, while they get a permanent fix. Corrective Action: Corrected at time of inspection.
