Permit Approved. Restaurant is not yet open. Owner stated restaurant will open on or about 14 May 2024. Verified establishment has a 100-gallon water heater. Special Condition: Establishment has a unique reverse osmosis system (RO) which blends municipal water to maintain a pH of 7.0 or above. Copper is installed downstream of RPZ backflow preventer. In order to ensure RO water maintains a safe pH of 7.0 or higher, the following must be performed:1. RO System must be serviced at least bi-annually. Maintain logs onsite and provide to Inspector upon request.2. RO water pH must maintain 7.0 or above.3. Label filters with date tags when serviced.If conditions are not met, then the copper plumbing will have to replaced with stainless steel or pex, or RO system removed.This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. Hot water temperature at handwashing sinks is at least 100 degrees F and at least 110 degrees F at all other sinks. 2. Refrigeration units are holding ambient temperatures of 41 degrees F or below.3. Reduced Pressure Principle Zone Assembly (RPZ) backflow preventer is connected between city water supply and reverse osmosis (RO) system. However, copper plumbing is installed downstream of RPZ and throughout establishment. Per RO filtration representative, the installed RO system blends municipal water back into system maintain pH and high total dissolved solids (TDS). For approval provide the following:- Label plumbing direction of flow and components.- Remove any unused "dead leg" plumbing and cap.- Label filters with date tags when serviced.- Provide an updated schematic after removing unnecessary plumbing.- Test and provide report for RPZ backflow preventer.- Clean copper piping and removed rust from base of RO system stand.- Retest RO water for pH and TDS and provide report.4.
