Inspector's notes
Observed big tray of baked potatoes being kept under the flat top grill. Potatoes were baked a couple of days ago. Internal temperature: 90*F. Person in charge (PIC) stated that the potatoes were put out over 20 minutes ago. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. If desired, potatoes could be placed under time as a public health control and kept at room temperature for a maximum of 4 hours. In that case, TCS products should be time stamped. PIC time stamped products at time of inspection. Corrective Action: Corrected at time of inspection.

Salsa, and black beans being stored in steam table measured 98-108 degrees F internally. Person in charge said they had been there for around 3 hours and discarded them at time. Additionally, cooked sausage links being stored on shelf above cooktop measured 110 degrees F. Sausage had been out for nearly 2 hours and was replaced at time, person in charge said they will keep sausage links in cooler drawer from now on. E&D Class 4, 10+ seating.Establishment has closed off kitchen with tight fitting doors and has a limited beverage counter, to not require air curtains at the continuous openings.Correct the following items prior to your routine inspection:1) Provide updated mop sink agreement to include signature from property management.2) Provide updated cleaning policies for coffee brewers and area above walk-in cooler.3) Repair slow hand sink drain in ware washing area.4) Seal all gaps/cracks/penetrations.5) Remove unused refrigerated make table.6) Discontinue using milk crates for shelving/long term storage.7) Establishment has installed an ASSE 1022 backflow preventer for soda system. This must be replaced every year since it cannot be tested. Equipment Inspection. Walked with Mike. Project about 85% complete.Correct the following items prior to Final:1) Provide a 3-compartment sink large enough to wash the largest item/utensil to be cleaned. All basins must fit at least 51% of the largest item to be washed. Sink must be NSF approved. If drain boards must be eliminated to fit the space, ensure adequate shelving is provided for air drying.2) Ensure the flow of ware washing from dish machine and 3-compartment sink both flow in the direction of having clean (sanitized) dishes come to the same point (the corner between the two areas).3) Provide an RPZ backflow preventer (ASSE 1013) for water line to soda system. Ensure relief drain for RPZ drains to a floor sink through hard pipe, sloped to drain, with a minimum 1” air gap at floor sink.4) Provide an ASSE 1022 in-line dual check backflow preventer on all water lines to coffee/tea brewers and ice machine.5) Provide a cleaning policy and procedure for coffee/tea brewers in front service area. This must include internal components, not just brewer baskets etc., due to the exterior openings. 6) Ensure all hand sinks have splash guards.7) Ensure adequate lighting is provided; emergency lights were not installed as of this inspection. 8) Ensure walk-in cooler is flashed off to walls and ceiling.9) Ensure hood is flashed off to walls and ceiling. 10) Ensure walk-in is provided with cove base. 11) Ensure all drain lines are hard-piped, sloped to drain, with 1” air gaps at floor sinks.12) Provide a usage agreement for mop sink.13) Replace light bulbs in mop sink room.14) If beverage refrigerator will support coffee/tea equipment, ensure it is on legs or casters. 15) Ensure all doors to kitchen are tight-fitting and self-closing, to be able to not require air curtains at continuous exterior openings.
