Observed a container of rice in the hot holding unit at 100*F using min/max thermometer. Person in charge (PIC) stated it was placed in the unit one hour prior to inspection and reheated to 165*F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed corn salad, cut cabbage, raw salmon and raw chicken cold holding in the cook-line prep cooler with internal temperatures of 49-54F, probe thermometer, verified by person in charge (PIC). According to PIC, the TCS foods were stored in the refrigerator for 4 hours or more. PIC voluntarily discarded the food, see embargo form. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
