Discussed the cleaning procedure for the fountain machine nozzles, pest control devices, and ensuring that an ASSE 1022 backflow preventer is installed on the water supply line to the non-carbonated beverage machines. Discussed cooling procedures and cold holding on the tray-line.
Inspector's notes
Observed 30+ fruit flies throughout the warewashing area and the adjacent hallway, mainly on the ceiling. According to PIC, pest control treatments are applied monthly, along with drain cleaning, by a certified technician. Additional fly traps have also been installed in the warewash area. Discussed pest harborage conditions such as unprotected outer openings (doors and windows), pooling water and soil/debris on floors/walls/ceilings. PIC will contact the pest control company for an additional treatment and remove or repair any harborage conditions in the kitchen. The pest control invoice can be provided to inspector by email within 10 days. Corrective Action: Correct prior to re-inspection.

Observed inside two separate hot holding units in main prep line with two large full trays of open cooked shrimp at 112*F-125*F, notified Person In Charge (PIC). Also observed two wrapped trays of fully cooked meet loaf at 125*F-133*F. Notified PIC.PIC directed employee to reheat all listed tcs foods to reheat to 165*F for hot holding. Per PIC the foods listed were prepared 15 minutes prior to inspection start time. Verified after 15 minutes. =========Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher.

Observed inside Hoshizaki two door refrigerator by diary walk in unit in temperature danger zone (41*F-135*F). Ambient temperature of the unit is 44.6*F-52.7*F. Inside the unit was: three bags of cut lettuce at 45*F-47*, cooked open ham at 46*F-50*F; cooked Garbanzo beans at 46*F; cooked black beans 46*F; corn medley with cut tomatoes at 47*F. Notified Person In Charge (PIC). PIC confirmed internal temperatures. Calibrated thermometers. PIC directed employees to discard all listed food inside refrigeration unit. Per PIC the tcs foods have been inside the unit for unknown amount of time. Establishment has morning temperature log daily completed. =====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less.
