Inspector's notes

Observed establishment hot holding cooked hamburgers warmer. Unit was set at setting 2. Internal temperature of hamburgers was at 119*F. Per employee the food was dropped off at 11am. Time of inspection is 12:40pm. PIC reheated hamburgers to over 165 for hot holding. ====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher.
