#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed sliced tomatoes, shredded lettuce, jalapenos, salsa, cooked chicken, beef, and pork with internal temperatures ranging 45*F-52*F. Ambient air temperature of the unit was 47.1*F, measured using min/max. PIC stated that the cooked meats and salsa had been in the unit since earlier in the morning (greater than 4 hours) and the items in the top of the unit about an hour. Instructed PIC to discard the salsa and cooked meat items and move the tomatoes, lettuce, and jalapenos to a refrigerated unit to cool down. PIC discarded the salsa and meats at time of inspection. Salsa and meats embargoed. Informed PIC that the unit cannot be used to store TCS foods until it is capable of holding them at 41*F or below. PIC agreed to discontinue use of the unit until it is fixed. Discussed time as a control and ice baths with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed several beef and potato burritos sitting at room temperature next to the cash register having internal temperatures of 86*F. Person in charge states they had been out for more than 4 hours and were voluntarily disposed of. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
