Explained to PIC that all foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Recommended using a container to place the raw tilapia and turn on cold running water to continuously spill out of container into prep sink drain to do the thawing process correctly.
