Observed uncooked pizzas with Canadian bacon, sausage, and beef as toppings stored above raw fruit (e.g., apples, oranges) in the retail fridge. PIC stated that the meat on the pizza is not pre-cooked (raw). Additionally, observed raw shell eggs stored above beverage cans and bottles in the same fridge. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Informed PIC that the leak needs to be repaired and the AVB needs to be looked at by a plumber or backflow specialist to ensure it is operating properly. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Informed PIC that the pest problem needs to be eliminated, and pest control needs to be applied by a certified pest applicator prior to reinspection on 3/17/2025. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Informed PIC that the physical facilities need to be cleaned at a rate which precludes the accumulation of dirt, organic matter, and food debris. Discussed the importance of preventing pests with PIC. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Inspector's notes
Observed various sizes of dairy milk in the walk-in refrigerator holding temperatures ranging from 47*F to 50*F. The ambient air temperature of the refrigerator was 46.1*F. PIC stated that the products had been in the refrigerator for longer than four hours. Informed PIC that the product needs to be discarded due to being above 41*F for more than four hours. Dairy milk was embargoed. PIC discarded milk at time of inspection. PIC agreed to use the other refrigerator, and the left side of the walk in, which is holding an ambient temperature of 37.5*F, if the receive a dairy shipment before the refrigerator is serviced. PIC stated they placed a work order for the refrigerator. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
