Roasts must be cooked to a temperature and for a time specified in ¶ 3-401.11(B) or reheated as specified in ¶ 3-403.11(E) of FDA Food Code, and may be held at a temperature of 130 °F or above. Observed raw chicken, raw beef, and various cheeses in reach-in cooler at 46-52 °F. Ambient temperature of cooler observed at 51 °F as per min/max holding thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Person in charge stated that foods had been placed in cooler about three hours prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Person in charge will discontinue use of cooler until repairs can be made. Corrective Action: Corrected at time of inspection.

Observed ice scoop stored between bottles of liquor and drink mix next to the ice bin at the bar. The ice scoop food contact surface was in direct contact with the bottles and the bottom of the compartment storing the bottles.
