Observed TCS food items with internal temperatures between 47F - 52F in the prep cooler by the cook line. TCS food items included cooked chicken, mozzarella cheese, cut tomatoes, sautéed onions and peppers, and cooked vegetable and dairy based sauces. The person in charge stated the TCS food items had been in the cooler about an hour and moved all the TCS food items into the large reach in coolers for rapid cooling. The prep cooler had an internal ambient temperature of 55.9F in the bottom compartment and 64.5F in the top compartment. The person in charge then discovered the cooler had been turned off and restored power to the cooler. Observed the ambient temperature in the prep cooler decrease. Discussed letting cooler run until it reaches and maintains TCS cold holding temperature of 41F or below. Correct By: Corrected At Time Of Inspection
