Concentration of quaternary ammonium (quat) sanitizer solution at in-use 3-compartment sink was measured at <100ppm. Quat sanitizer solutions shall be maintained at 200-400ppm. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Employee remade sanitizer solution at correct level and re-washed, rinsed, and sanitized recently cleaned dishes and utensils. Corrective Action: Corrected at time of inspection.
