Inspector's notes

Observed TCS ingredients such as diced tomatoes, hamburger patties, corn, tofu, and cooked pasta in prep cooler at temperatures between 48°F and 55°F. An ice bath had been used two hours prior when items were placed in unit to maintain temperature as summer approached, but ice had melted at time of inspection. Ice was placed in unit and items cooled to 41°F or below at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown. Corrective Action: Corrected at time of inspection.
