PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed 12 cartons of eggs in a refrigeration unit towards the back of the establishment maintaining an ambient air temperature of 47°F. Temperature of eggs was measured at 46°F. Informed PIC that the unit was not holding temperature. Eggs were voluntarily discarded during the time of inspection. Ensure all TCS foods are stored at 41°F or below.
