Prior to next routine inspection, have backflow device serviced by a plumber or backflow specialist to ensure backflow device is in good repair.2. Discussed air gap requirements with PIC. Ensure all discharge pipes are properly secured with a 1 inch air gap between the pipe and the floor drain to prevent cross contamination. Discussed using zip-ties or another effective means to prop up the pipes above the floor drain.

Observed sanitizer bucket stored on the cookline with a concentration of 0PPM quaternary ammonium sanitizer at time of inspection. Per PIC, the bucket in question was due to be refreshed and was vacated from the cook line. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

The cutting board being used to cut the cook chicken coming off the grill was heavily scratched and scored. Also, the other cutting board stored as clean was heavily scored and scratched. Discussed increasing replacement frequency to prevent cutting boards from becoming too scratched and scored. Per FDA Food Code , “Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced” ."Cutting surfaces such as cutting boards and blocks that become scratched and scored may be difficult to clean and sanitize. As a result, pathogenic microorganisms transmissible through food may build up or accumulate. These microorganisms may be transferred to foods that are prepared on such surfaces. Corrective Action: Correct prior to next routine inspection.
