Observed dish washer employee pick up a knife that fell on the ground and place it on a ware washing tray for dirty food contact surfaces. Without first washing their hands and changing gloves observed the employee put away clean bowls that were just sanitized in the dish machine.

Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Reviewed handwashing situations and steps to proper handwashing. Corrective Action: Corrected at time of inspection.

Observed buildup of dark residue on the interior of the soda gun nozzle at the bar. Equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment shall be cleaned at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Discussed soda nozzle cleaning frequency. Please clean soda nozzles as frequently as necessary and prior to the next routine inspection Corrective Action: Correct prior to next routine inspection. Repeat Violation 4-602.11 (E) - Core: Equipment Food - Contact Surfaces and Utensils-Frequency; Non-TCS. Predefined Comment: Food-contact surfaces must be properly sanitized after washing and rinsing. Final rinse chlorine concentration shall measure between 50-100 PPM. It was determined the supply of sanitizer was replaced recently and the sanitizer had not been primed. After priming and running the dish machine two more times the final rinse chlorine concentration was re-tested at 100PPM. Provided low temperature sanitizer logs electronically. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.

Repeat Violation Core-3-304.12 , C: In-Use Utensils, Between-Use Storage Observed spatulas sitting in stagnant water on the cooks line. Water measured 98*F with inspector probe thermometer. Observed spoon and scoop sitting in a glass of ambient water. All utensils were sent to the dish washer at time of inspection.
