Inspector's notes

Observed mechanical low temperature chlorine sanitizing dish machine in use at time of inspection sanitizing food contact surfaces and a strainer. Acceptable final rinse chlorine sanitizer concentration shall measure between 50-100 PPM. After replacing the supply of sanitizer and running the dish machine two more times the final rinse chlorine sanitizer concentration measured at 0 PPM each time. PIC made a service call at time of inspection. Establishment will sanitize food contact surfaces in the three-compartment sink until the dish machine is serviced and maintains 50-100 PPM chlorine sanitizer concentration. Discussed having dish washer employees verify sanitizer concentration with chlorine test strips before sanitizing food contact surfaces in the dish machine. Corrective Action: Corrected at time of inspection.

Chef had staff use a shop vacuum to clear the water and then clean unit at time of inspection. Discussed with chef that all nonfood-contact surfaces of equipment shall be kept free of an accumulation of standing water, dust, dirt, food residue, and other debris.
