Ambient temperature of walk-in observed at 46.8 with inspector's min/max thermometer at the start of the inspection. Exterior thermometer on the walk-in displayed 48°F.

PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. According to PIC the elevated ambient temperature of the walk in refrigerator was due to frequent opening of the walk-in door during preparation for dinner service. PIC made service call at time of inspection. After instructing staff to not enter the walk in refrigerator, ambient temperature was observed at 40.6°F near the end of the inspection. Corrective Action: Corrected at time of inspection.

Observed tightly covered containers of cooked thick bacon/65*F cooling in the walk in refrigerator. Observed condensation on the interior of the lids. After discussion with the person in charge all TCS foods were within safe time parameters (3 PM prep).
