Establishment is using reduced oxygen packaging (ROP) for various items being stored in cooler and freezer. Items include: raw chicken, raw beef, raw fish, cooked sauces, cooked soups, cooked beef with date marks ranging up to and beyond 30 days. Establishment is also cooking vacuum packed items with sous vide, and holding them in hot box while still packaged. Seafood items were removed from packaging at time and variance application information was provided at time. Please ensure a variance is obtained for specialized processes such as ROP. Corrective Action: Corrected at time of inspection.
