The walk-in cooler had a temperature of 46*F with min/max thermometer. A tray of Dolmas (stuffed grape leaves) with a date of 3/4/25 (previous day) had an internal temperature of 45*F. and were discarded at time of inspection. The tray of hummus from the previous day was also discarded and had an internal temperature of 46*F. The remaining foods prepped within 1-4 hours were moved to alternate cold-holding unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
