Observed seaweed salad, and salad with octopus in sandwich prep cooler next to wall in sushi prep area at 51*F. Cold hold of food to be 41*F or lower. Items were embargoed and discarded by sushi staff. Cold hold food t be held at 41*F or lower. Advised staff to monitor temperatures through out day using a metal stem thermometer. Corrective Action: Corrected at time of inspection.

Small sandwich prep cooler along wall in sushi prep area with an ambient temperature using a mx/min thermometer at 52*F. Cold hold equipment must maintain Temperature control for safety foods at 41*F or lower. TCS foods were removed and discarded, other foods in unit were non TCS foods. Refrigeration on other side of isle is able to hold TCS foods from this unit. Do not return TCS foods until unit is able to maintain food at 41*F. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed gyoza (78°F) and tempura battered shrimp (78-85°F), calamari sticks (77°F), and soft shelled crab (77°F) sitting out at room temperature by the fryer. A portion of tempura battered shrimp was under a heating lamp, which was ineffective at keeping them above 135°F. After a discussion with staff, it was determined these products had been cooked 45 minutes prior to temperature measurement and would be re-fried to order. Discussed placing these foods, which are cooked at the beginning of each shift, on Time Control to be discarded at the end of every shift (less than 4 hours). The establishment had no documentation of time control for these foods. A time control policy was written while EHS was onsite. Once foods are on time control they must be discarded at the end of the time period and they may not be re-cooled. Corrective Action: Corrected at time of inspection.
