While conducting inspection observed product that is cooked and cooled in walk-in cooler such as beans. Chorizo was observed cooking and raw shell eggs were observed for breakfast items on menu. Per person in charge establishment may be adding more raw proteins onto menu in future. Food preparation that is occurring is above the means of the current permit classification. After speaking with person in charge they wish to continue with more advanced food preparation. Permit will need to increased from a Class 2 to Class 3 E&D.

The Person in Charge (PIC) stated that the temperature of this unit had been less than 41°F less than 4 hours before the inspection time, so TCS items in this unit were moved to another functioning refrigerator at the time of inspection. Discussed cold holding policies and procedures with PIC. Refrigeration capacity is sufficient.
