Inspector's notes

Observed several TCS products including hot dogs, corn dogs, TCS cheese, TCS cheese sauces, shredded lettuce, chili, mayo with dairy, beef patties, coffee creamer, and soft serve all reading an internal temperature of 45-47F inside walk-in cooler. Walk-in Cooler ambient temperature was reading 47F. PIC stated that walk-in was down and that maintenance was coming to fix. Maintenance did arrive during time of inspection to fix walk-in cooler. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at Time of Inspection

Observed main walk-in cooler reading an ambient temperature of 47F. TCS products being stored in walk-in cooler were also reading 45-47F. PIC stated walk-in cooler was not working and maintenance was on their way to fix it. Maintenance did arrive during time of inspection to fix walk-in cooler. Informed PIC that cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.
