Inspector's notes

Observed salsas, pico de gallo, and guacamole containing diced tomatoes with internal temperatures ranging between 46°F- 50°F in cold holding display unit. Ambient temperature of unit measured below 35°F. Determined pans were too shallow and not in contact with the cold element. Per person in charge (PIC), they had set the salsas out about one hour prior. Staff moved items into cooler for rapid cooling. Staff replaced shallow pans with deep pans. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
