Spoke to the National Manager of Food Safety – Field Operations for Costco regarding the cooking and sampling of raw foods at the demostration stations. The raw foods may be cooked and sampled as long as handwashing stations are available as required by code and cross-contamination is avoided.

Advised manager food demonstration is to restricted to pre-cooked foods only. Requested raw meat/seafood to be fully cooked in the properly permitted deli before customer sampling at the demonstration stations.

This establishment is not participating in the award program at this time and had no Priority, no Priority Foundation violations on this inspection.No County legal action will result from this inspection.Emailed report to Danisha.
