Observed in-use back warewashing machine in bar dispensing 0ppm chlorine sanitizer. Sanitizer concentration did not change after multiple washes and a second priming of the machine. Food-contact surfaces must be properly sanitized after washing and rinsing. Establishment will use a bussing tray and the warewashing machine in the kitchen to sanitize the dishes from the bar. Corrective Action: Corrected at time of inspection.

Observed pico de gallo, sliced cheese, chopped lettuce, and lettuce slices in the prep tables at temperatures exceeding 41°F (48-52°F). Per PIC, food had been prepped and immediately placed in the prep table. Prep tables are rated to cold hold, not to cool. PIC Placed out-of-temp foods in the reach-in fridges to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed mop sink faucet leaking water into the mop sink basin. The mop sink basin was not draining. Observed front warewashing machine at the front of the bar was leaking water onto the floor in front of the unit. Must repair all plumbing to a state of good repair prior to next routine inspection.
