Discussed hand sink options at griddle station with PIC including but not limited to: keeping door propped open during operating hours with training for staff; installing hand sink with sump pump, etc.
Inspector's notes
Observed cooked cheese sauce in deep, covered container at 43-44'F in middle of product. Per PIC, sauce was prepared the day prior to inspection. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
