Establishment used bleach as sanitizing agent. No chlorine test strips were able to be provided at time of inspection. Inspector provided a small quantity to use temporarily. Ensure that chlorine test strips are purchased and available on site prior to reinspection. Corrective Action: Correct prior to re-inspection.

Per person in charge beans had been made and placed into cooler the previous day. As beans had not cooled within proper time frame they were embargoed. Discussed more effective methods of cooling with person in charge such as more shallow layers. When cooling, food shall go from 135'F to 70'F within the first 2 hours and down to 41'F within the remaining 4 hours. Correct By: Corrected At Time Of Inspection
