#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed foods (diced tomatoes, cheese, diced ham, crumbed, cooked sausage) with internal temperatures of 43*F to 47*F in the reach-in across from the cook station. Person in charge (PIC) stated the reach-in lid had been left up during the rush. Also observed raw shell eggs and pooled eggs in an ice bath near cook station. Internal temperatures of eggs were between 46*F and 50*F. Discussed proper food temperatures. All foods were removed and placed in an alternate unit. New food was brought out for use. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed 5 bags of cooked potatoes in the walk-in refrigerator with internal temperature measured between 48*F to 49*F. Manager stated the cooked potatoes were received about 1.5 hours prior to the inspection and did not measure the temperature before placed into the walk-in refrigerator. Educated the manager all food must be checked to follow the food code before received. The cooked potatoes were embargoed at time of inspection. Corrective Action: Corrected at time of inspection.
