Inspector's notes

Observed Pico de Gallo, shredded cheese, cooked peppers, corn, red and green salsas, and cooked shrimp in a prep table in the kitchen with temperatures of 54 to 60*F at time of inspection. Per cook, all items were placed in the prep table less than 2 hours prior to inspection. Observed ambient temperature of the prep table at 48.5*F with an min/max thermometer at time of inspection. Observed multiple working cold holding units/freezers capable of keeping food items at 41*F or below at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
