Inspector's notes

Observed densely packed containers of beans in walk-in refrigerator in process of cooling, stacked with the lids on. Discussed ways to improve cooling methods and provided guidance documents in English and Spanish as well as a link to the AMC toolbox. Operator moved all items in the cooling process to the top shelf and removed the lids. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
