PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed spinach, chopped lettuce, and sliced tomatoes holding 44-47F in the open refrigeration table on the assembly line. It was determined that the unit was holding 52F. Inspector lowered the temperature to 33F. The unit now reads 41F. PIC moved the containers of the TCS food items to the walk in refrigerator to cool down, as it had been less than 2 hours since placed in the cooler. PIC replaced the containers with food items starting at 41F. TCS food items must be held at 41F or below when cold holding. Correct By: Corrected At Time Of Inspection
