Observed cooked chicken and tomato bruschetta with internal temperatures between 46°F and 49°F prepared day prior to inspection and chopped romaine lettuce with internal temperature of 46°F placed in prep cooler four hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection. Reinspection will occur on 7/2/26.
