Inspector's notes

In a prep cooler, observed cooked onions, deli turkey, cheese and lettuce having internal temperatures of 44-49*F. Person in charge states these food items were placed in the unit less than 4 hours prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Inspector's notes

Observed gravy cooling in an ice bath but the ice was only making contact with the bottom of the gravy pan (container of ice not big enough to cool the whole gravy pan). Also reviewed cooling procedures for cooked onions in which according to the person in charge, are left out at room temperature until they are cool to the touch. After the cooked onions are cool to the touch, they are panned, wrapped and placed in the walk in cooler to finish off cooling (possibly allowing the heat to be trapped not allowing to properly cool down in the appropriate cooling time/temperature parameters). TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Person in charge made the ice bath bigger and state they would cool the onions uncovered and in shallow pans until they are completely cooled down to 41*F or lower. Corrective Action: Corrected at time of inspection.

Observed employee handling dirty dishes at mechanical dishwasher, clean food debris off dirty dish side of dish machine table with hands, clean water off floor with towel and then proceed to put away clean dishes without washing hands. Had employee wash hands and dishes were re-sanitized. Discussed with PIC and employee that hands must be washed prior to handling clean dishes after handling dirty dishes or performing any task where contamination could occur. Discussed with PIC that employees may handle dish trays prior to washing hands to move trays, run a few loads of dishes, then wash hands and put away dishes.
