Inspector's notes

Observed employee handle a cash transaction and immediately after, begin to make a drink and touch food-contact surfaces. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection and the following cash transaction was immediately followed by a proper handwash. All food-contact surfaces touched were placed in three-compartment sink to be properly sanitized. Corrective Action: Corrected at time of inspection.

Sanitizer contact time for quaternary ammonium (quat) is 60 seconds for food contact surfaces. In-use utensils that are stored in water should be stored in water that is held at 135 degrees Fahrenheit or warmer. PIC is currently enrolled in Food Protection Manager coursework.
